Makes perfectly cut cookies with each pass. 2.25" , made of heavy aluminum. 

This roller takes all the work out of cutting Fattigmand and making the slit in the middle for folding the dough through. 

 

 

Iva's Fattigmand
Fattigmand, a traditional Scandinavian cookie flavored with cardamom and cognac. These deep fried treats are easy to make and taste like nostalgia. Thanks to the new Fattigman Roller that makes the perfect size cookie with the slit in the middle for folding one end through to create a knot.

Recipe:
6 Eggs
1Tbs Butter, melted
3Tbs Sugar
6Tbs Heavy Cream
1/2Tsp Salt
1/2Tsp Ground Cardamon
2Tbs Cognac or Brandy (optional)
3C Flour, approx

Directions:
• Beat Egg Whites until they form peaks and set aside
• In a separate bowl Beat Egg Yolks and mix in remaining ingredients, except Flour
• Fold in the Egg Whites to your batter
• Gradually mix in Flour until the dough looses most of its stickiness and is firm
• Divide into 4 equal parts, cover and refrigerate at least 30 minutes. Keep refrigerated till needed.
• Roll the dough out on a floured surface and form into a 1/8” thick sheet
• Use a Fattigmand Cutter to create the proper shape and make slit in the center
• Pull one end of the Fattigmand through the center hole to make a knot
• Fry in a 2” deep pan at 400° for 2-3 minutes until golden brown turning half way through
• Remove onto paper towels to remove excess oil
• Toss in a low bowl of powdered sugar to coat

History:
Fattigmand translates to “poor thing”. Fattigmand probably originated in Western Norway around Bergen in the early to mid 1800’s. There are many references to knoted cookies with cardamon and cognac flavor. The ingredients used hardly made them poor by any standard of the day. However the clever way of folding one end in through the center and creating an interesting knot like appearance made them the perfect addition to any cookie tray. I prefer to use Cognac when making these as it adds a richer flavor and would have been more authentic.
