Kransekake Rings - Non-stick
Set of six rings with three sections. A Labor-saving way to create the traditional 18-layer Scandinavian wedding cake.
Our Pro Tip is to use good Bakers Almond Paste and not Marzipan. Marzipan has too much sugar and makes the rings stick to the pans and be flat. Our other Tip is to use our Heavy Duty Metal Cookie Gun. It has a pastry tip that you can use to make the perfect diameter ring without all the sticky mess of trying to roll out the dough.
Decorate with Scandinavian Tooth Pick Flags and you are ready to go.
Iva's Kransekakke
Recipe:
1 1/2lb Almond Paste, at least 60% almond (Not Marzipan)
1 1/2C Sugar
3 Egg Whites, Lightly Beaten
Directions:
• Mix all ingredients thoroughly in an electric mixer on medium
• Liberally grease your Kransekakke Pans
• Roll dough into 3/8-1/2” diameter ropes and place in pans*
• Preheat oven to 325° and bake for 20 minutes, edges should just show signs of turning golden
Icing:
1 Egg White, Lightly Beaten
2C Confectioners’ Sugar, (powdered)
1Tsp Lemon Juice
1/2Tsp Vanilla
Hints:
If you can’t find Almond Paste you can use this recipe
4 ⅓ cups sifted confectioners’ sugar (powdered)
2 ½ cups finely ground blanched almonds
2 ½ cups finely ground unblanched almonds
1 teaspoon baking powder
3 egg whites
Use a metal Cookie Press with a pastry tube extension, @ 3/8-1/2”d. Load the Cookie Press with dough and shoot into the Kransekakke Forms. This makes uniform layers. Our Bethany Housewares Cookie Press is ideal and strong enough to hold up to the dough.
Use the icing to glue each ring in place.
We use the rest of the icing to decorate the cake usually in small garland like loops around each ring. Add toothpick flags or any decoration.
If you have extra dough make 3 to 4 “S” Shapes that can be attached to the side of the cake
History:
Kransekakke first started showing up in Norway and Denmark at formal occasions for the wealthier class and for the Crown. Mostly because of the expense of making them. Almonds were expensive and reserved for special occasions. Gradually these special cakes started showing up in normal families for special occasions such as wedding. This traditon has lasted till today. More Kransekakke are served at Weddings and in Norway at 17th of May Celebrations than any other cake. You can even go into most Norwegian Grocery stores and buy on premade and ready to serve. At some point a bottle of wine was incorporated into the center of the cake to add to the occasion.
