Sandbakkelse Tins - Large

3" diameter fluted aluminum tins
Iva's Sandbakkelse
Sandbakkelse are a traditional Scandinavian shortbread style cookie flavored lightly with almond. These are some of the easiest of the Scandinavian cookies to bake and can either be served plain or with a filling.
Recipe:
7/8C Butter, Softened
3/4C Sugar
1 Egg White
1 3/4C Flour
1tsp Vanilla
1tsp Almond
Directions:
• Mix: Softened Butter, Sugar, & Egg White
• Stir in: Flour, Vanilla, & Almond
• Form into a log about 2” in diameter
• Refrigerate
• Cut slices about 1/4” and push into Sandbakkelse Tin, make sure not to go over the top edge of the tin otherwise it is hard to get out of the tin
• Bake in a 350° oven for 12-15 minutes until done
• Allow to cool and remove from tin by squeezing the sides of the tin
History:
Sandbakkelse translates into “sand pastry”. The first Sandbakkelse Tins showed up in Norway in the mid 1800’s and were fashioned in many tartlet style shapes, always with fluted sides. They gained popularity in the early 1900’s throughout Scandinavia with the introduction of finer flour was widely available. The original ones would have had a “sandy” or more granular texture due to earlier flour. Also the cookie crumbles when eaten like “sand”. There are as many variations of Sandbakkelse as there are Scandinavian Grandmothers. Plain or with filling they are always a hit.
